As we head into the final lap of National Physical Fitness and Sports Month, I took my turn this week to share my own fitness journey, Staff Stories: Unlocking nerd fitness. Before I head into the week’s yummiest recipes, I’d like to direct your attention to The Jolly Tomato where blogger Jeanne Ponessa Fratello makes an impassioned plea on behalf of SNAP funding (formerly food stamps) and the importance of wiping out child hunger in our own country. Reading Jeanne’s post, I’m reminded of how lucky I am to have food on my own family’s table, and it reinforces my determination to make sure that food is well-considered. With that in mind, my husband (who does nearly all the shopping and cooking for our household) has been trying hard to support farmers in our area by buying local produce whenever he can. Wednesday’s dinner of chicken, local garlic, zucchini, local arugula, local carrots, and local green onion in a whole wheat wrap, was one of my favorites this week. He also made a delicious Zucchini Carpaccio last night that set my lemon-loving heart afire.
Green-colored dishes caught my eye especially in the blogosphere this week, including a Smashed Chickpea & Avocado Salad Sandwich from Prevention RD Nicole, and this Cold Zucchini Soup from Michelle Hays at Blog for Family Dinner.
In the category of snacks, another recent discovery at my house was this Peanut Butter Banana “Sushi”, dug up from Domestic Charm. This week’s offerings from the blogosphere look delicious as well, including this Sunflower Seeds and Cinnamon Sunbutter from Amy at Super Healthy Kids.
