Welcome to another FoodPlay Friday!
After all my winter grumbling, I’m sure it’s no surprise to see me here celebrating spring! Thanks to some unseasonably warm weather, it feels more like spring than usual here in New England. Walks around town with my dog have turned up large patches of daffodils in full bloom, weeks ahead of my expectations.
It’s always interesting to note trends in the healthy food blogosphere, and this week’s trend seems to be granola (or granola-like foods), starting with Today I Ate A Rainbow!‘s recent entry for Kids Cook Monday. One personal favorite of mine was this Maple Coconut Granola from Elizabeth Jarrard at Don’t White Sugar-Coat It. In the “granola-like” category, check out this Maple Quinoa Crunch from the Meal Makeover Moms, this Maple Pecan Coconut Quinoa Breakfast from the Inspired RD, and (my personal favorite) Prevention RD‘s Cinnamon Apple Quinoa Parfait.
Bell peppers were also popular this week, making appearances in Keep Your Diet Real‘s Mexican Stuffed Peppers and Super Healthy Kids‘ tips on freezing a Peck of Peppers. And early in the week, stir-fry was on the minds of both Inspired RD Alysa and Prevention RD Nicole.
In kid-focused nutrition, these articles particularly caught my eye—The 10 Essentials for Raising Happy Eaters (Raise Healthy Eaters and MyPlate for Kids (Quirky Momma).
